Dry rub (“dry massage” in literal translation) is a mixture of herbs and spices, without added liquids, used to season meat that will be roasted or grilled – the meat is massaged with this mixture. Dry Rub creates a crust on the meat, enhancing flavor without adding moisture. A traditional American recipe, Dry Rub is a substitute for the traditional liquid marinade. It can be used in pork, long-cooked or smoked chicken meat. Using it alongside a barbecue, it gives it that crunchy appearance.
